For Fork’s Sake – Cafe Temple’s Vegan Choc Chip Brownies

As you may already know, we're huge fans of Galway's foodie culture. Although we can't visit our favourite restaurants right now, we thought we'd bring a taste of Galway grub, right to your kitchen. Teaming up with some of the best restaurants and cafes in town, For Fork Sake is an online recipe series for you to try and recreate your favourite dishes at home.

Café Temple's Vegan Chocolate Chip Brownies

These Vegan Chocolate Chip Brownies are delicious and very easy to make. They are made using coconut milk and rapeseed oil instead of using animal products which gives them a light fluffy texture.

The thing to make sure of when cooking this recipe is that if you want to substitute the rapeseed oil, don’t use a very bitter oil like a strong olive oil which can really influence the flavour in its place. Instead, stick to a lighter flavoured vegetable oil or even coconut oil.

Finally, have some fun with them. If you want nuts or white chocolate chips, add them in. Recipes are meant to be adapted to what you prefer, you are the one cooking it after all! This recipe will make ten good brownie portions for you to share or indulge in
 
Temple Cafe Galway

Preparation time: 5 minutes // Cooking time: 30 minutes

Ingredients

250g Flour
350g Light Soft Brown Sugar
65g Cocoa Powder
1 tsp Baking Powder
250ml Coconut milk
250ml Vegetable/Rapeseed Oil
1 capful Vanilla Essence
100g Chocolate Chips

Method

1. Preheat your oven to 180°C.
2. Weigh out all the dry ingredients into a bowl (flour, light soft brown sugar, cocoa powder, baking powder and chocolate chips.
3. Add in the vanilla essence, coconut milk and rapeseed oil and mix well with a whisk until the mixture is a nice consistency and has no lumps.
4. Line a tray with baking parchment and pour the mixture evenly into the tray.
5. Cook for 25-30 minutes at 180°C. You want your brownies to be soft but not raw in the middle, the easiest way to check is by sticking a knife into the mixture, if it comes out clean they’re ready.
6. Let them cool, plate up and enjoy!
