Aniar Michelin Star restaurant in Galway's Westend
Aniar Restaurant is the brainchild of husband and wife team, Jp McMahon and Drigin Gaffey. Driven by their love of good quality food and passion for innovation, the pair opened this unique restaurant in 2011. McMahon and Gaffey wanted to combine the international trend of clean Nordic styles of cuisine with the flavours of the West of Ireland.
Aniar works closely with local farmers, growers and fishermen to acquire the best local produce available. It integrates flavours from the sea and wilderness into the menu by using foraged ingredients.
The challenge of creating a food specific to the west results in a distinctive menu, which has earned Aniar a Michelin star for three years in a row. McMahon explains “The restrictions of what is available to us seasonally force the creative juices to flow.” McMahon works closely with his culinary team, currently headed by Ultan Cooke, making the kitchen a creative think tank of culinary ideas. Keeping it in the family, McMahon’s brother, Alex, heads the floor with his extensive knowledge of the menus and seamless charm.
